Moroccan Couscous
Q) What would you require?
- One cup of couscous (which is like pasta made from wheat)
- A cup of vegetable stock or chicken stock
- One and a half cups of water
- Two tablespoons of olive oil
- Two carrots, peeled and cut into thin and long pieces
- One full onion (big one)
- A sweet potato, chopped into long pieces if you want it
- One turnip, peeled and chopped into thin strips
- Same with one more zucchini, skinned and julienned
- A tablespoon of tomato paste
- A can full of garbanzo beans
- Half a teaspoon of ground turmeric
- Half a teaspoon of ground cinnamon
- Craisins or golden raisins
- A pinch of cumin
- Almonds
Q) How would you make it? (Would serve about 6 people)
- Add couscous boiled water and stir
- Cover the utensil and simmer for about two minutes
- Wait till the water is absorbed
- Stir till the couscous plumps up
- Once it does, remove the utensil from heat and leave it for 5 minutes
- Use another utensil and put it on high heat
- Sauté zucchini, turnip, onion, sweet potato and carrots
- Cook for about ten minutes
- Turn the heat to medium flame and add chicken or vegetable stock
- Now let this simmer for a while
- Time to add tomato paste, spices and garbanzo beans
- Add this mix and stir in couscous
- Cover it and remove the utensil from the burner
- Use nuts and craizins or golden raisins to garnish
