Moroccan Couscous

Q) What would you require?

  • One cup of couscous (which is like pasta made from wheat)
  • A cup of vegetable stock or chicken stock
  • One and a half cups of water
  • Two tablespoons of olive oil
  • Two carrots, peeled and cut into thin and long pieces
  • One full onion (big one)
  • A sweet potato, chopped into long pieces if you want it
  • One turnip, peeled and chopped into thin strips
  • Same with one more zucchini, skinned and julienned
  • A tablespoon of tomato paste
  • A can full of garbanzo beans
  • Half a teaspoon of ground turmeric
  • Half a teaspoon of ground cinnamon
  • Craisins or golden raisins
  • A pinch of cumin
  • Almonds

Q) How would you make it? (Would serve about 6 people)

  1. Add couscous boiled water and stir
  2. Cover the utensil and simmer for about two minutes
  3. Wait till the water is absorbed
  4. Stir till the couscous plumps up
  5. Once it does, remove the utensil from heat and leave it for 5 minutes
  6. Use another utensil and put it on high heat
  7. Sauté zucchini, turnip, onion, sweet potato and carrots
  8. Cook for about ten minutes
  9. Turn the heat to medium flame and add chicken or vegetable stock
  10. Now let this simmer for a while
  11. Time to add tomato paste, spices and garbanzo beans
  12. Add this mix and stir in couscous
  13. Cover it and remove the utensil from the burner
  14. Use nuts and craizins or golden raisins to garnish
